A Brie style cheese with a layer of cracked peppercorns and a fine dusting of edible charcoal on the surface. All our cheese is made using natural cultures and the Brie is not sprayed with Penicillium camemberti which is used in the production of Camembert and Brie cheeses, on which colonies of P. camemberti form a hard, white crust. It is responsible for giving these cheeses their distinctive flavours. However, as the cheese matures the crust is often inedible.
This makes the Brie Nuit quite distinctive. Packed at 5 weeks the cheese is creamy and matures in flavour and changes in texture over the weeks.
